The Queen of Melbourne’s boutique hotel scene, the iconic Adelphi opened a new chapter on its 21st birthday in 2014 as the world’s first “dessert” hotel. Thanks to design guru Fady Hachem, the interiors feature rich, chocolate-toned furnishings, carpets patterned like cakes, “licorice allsorts” stools, and the smell of baking in the air. The spiky, edgy character of Adelphi is alive in its rooms—envision wood paneling on the walls and carpets with bold geometric shapes. Marrying whimsy with comfort, the rooms and suites are classed as Comfy King, Comfy Twin, Plush King, Flinders King, and Palatial Suite. The popular Comfy King and Comfy Twin rooms offer a single king-size bed or two generous single beds respectively. The elegant Plush King suites and bright Flinders King suites each boasts a king-size bed and larger bathrooms with double vanities and a separate bath and shower, with the later overlooking Flinders Lane. The grand Palatial Suite is the most luxurious of the options, offering a large bathroom with double vanities and a separate bath and shower.

Hotelier Dion Chandler’s fondest memories of traveling with his family as a child were the hotels they would stay in. It’s no wonder that Chandler went on to explore the boutique hotel world, having stayed in over 70 hotels and guesthouses in Europe, and also having worked in high-end independent hotels. Together with business partners Ozzie Kheir and Simon Ongarato, and Fady Hachem, the founder of one of Australia’s most progressive design studios, Chandler now has a unique product of his own—the iconic Adelphi.
Hachem’s innovative approach has not only won him a roster of prestigious clients but international accolades as well. When not undertaking a rigorous cross-disciplinary study of design, you can find Hachem hanging out with his two Pomeranians.
